Red Ale Malt is meant to be used in brews where certain characteristics are desired, such as a nice reddish hue, a strong and full malty flavour with a hint of acidity. Owing to the above and the process involved, Viking Red Ale Malt causes very little amylolytic activity. Usage rate of up to 20% of the grist is recommended. You may also exceed it if you feel brave enough.
